Heat a large skillet over medium-high heat. Add the ground beef (or turkey) and season with salt, pepper, and ground ginger. Cook until browned, breaking it up as it cooks. Drain any excess grease if needed.
Stir in the minced garlic and cook for about 30 seconds, until fragrant.
Add the coleslaw mix and cook for 4–5 minutes, stirring occasionally, until the cabbage begins to soften.
Pour in the soy sauce, rice vinegar, and sesame oil. Stir everything together until well combined and continue cooking for another 2–3 minutes.
Remove from the heat and garnish with sliced green onions and sesame seeds if desired. Serve as is or over steamed rice or cauliflower rice.
