These shrimp fajitas come together fast with juicy shrimp, tender peppers, and warm spices. Everything cooks in one skillet, and the result is a fresh, colorful dinner that tastes like it took way more effort than it did.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 white onion, sliced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- salt, pepper to taste
- tortillas warmed
Instructions
- In a bowl, season the shrimp with cumin, paprika, chili powder, garlic powder, salt, pepper, and 1 tbsp of olive oil. Toss until evenly coated.
- In a large skillet over medium high heat, add the shrimp to cook 3-4 minutes per side. Remove from the skillet and set to the side.
- In the same skillet, add the remaining olive oil along with sliced peppers and onion. Cook for 5-7 minutes until softened.
- Add the shrimp back into the skillet and toss everything together until warmed through.
- Serve with warm tortillas and enjoy.
