Taco Muffin Bake Recipe

I am a huge fan of this recipe as it is packed with flavor and super convenient to put together. It doesn’t take any special ingredients to make and the whole family will love this quick dinner.

Ingredients

  • 1 lb ground beef
  • 4 eggs
  • 4 oz. green chiles, diced
  • 1 pack taco seasoning
  • 2/3 cup heavy cream
  • 1/4 cup salsa
  • 1/3 cup green onions, diced
  • 2 cup shredded sharp cheese

Instructions

  1. Preheat oven to 350 degrees
  2. In a large skillet over medium high heat, cook ground beef for about 7 minutes or until no longer pink, chopping into small crumble pieces.
  3. Drain any oil and add in taco seasoning and diced chiles. Mix well and remove from heat.
  4. In a large mixing bowl, whisk 4 eggs, add in heavy cream, 1 cup cheese, salsa, and green onions. Whisk all together.
  5. Combine cooked taco meat with mixture.
  6. Grease a 12-inch round muffin dish and fill with mixture. Top with 1 cup cheese.
  7. Bake in oven for 40 minutes or until cheese is golden brown and the casserole is set.
  8. Let cool for ten minutes and serve with your favorite taco toppings.

Notes

This recipe can also be made into a casserole using a 9-inch baking dish.
