Sweet Potato Casserole Recipe

Sweet potatoes are naturally sweet and make for the perfect addition to Thanksgiving Dinner.

This recipe is inspired by Ruth Chris’ sweet potato casserole. Now you can enjoy the flavors in the comfort of your home and especially near the holidays as it is rich, flavorful, and guaranteed to be a new family favorite.

Ingredients

  • 4 large, sweet potatoes
  • 1 egg
  • 2 sticks unsalted butter
  • 1/3 cup sweetened condensed milk
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 tbsp vanilla extract
  • 1 cup chopped pecans
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup marshmallows optional

Instructions

  • Preheat oven to 350 degrees F.
  • Bake sweet potatoes for 60-90 minutes until tender
  • Let cool and carefully remove the skin
  • In a mixing bowl, mix together the sweet potatoes. Remove any strings and clumps. Add in 1 stick melted butter, 1 cup granulated sugar, 1 egg, condensed milk, 1 tbsp vanilla, cinnamon, and nutmeg. Combine well with mixing spoon or stand mixer.
  • In a separate mixing bowl, combine 1 stick melted butter, brown sugar, flour, 1 tbsp vanilla, and chopped pecans.
  • In a greased casserole dish, add in sweet potatoes mixture evenly, then dapple in pecan mixture on top. Top with marshmallows if desired.
  • Bake for 40 minutes or until golden brown.

Does the brown sugar go in sweet potato mixture or pecan mixture
