This recipe is a keto staple in my household. I love to make this when I don’t feel like cooking, but also want to have a flavorful and low carb meal. You can enjoy this as side dish or the main dish as well.
Low Carb
I prefer to use beef sausage for this recipe, but you can use pork or turkey as well.
Ingredients
- 1 medium cabbage head
- 1 small yellow onion, sliced
- 1 orange bell pepper, sliced
- 1 pack andouille sausage, 13 oz
- 1/2 pack of bacon, 8 oz
- 1/2 tbs garlic powder
- 1/2 tsp black pepper
- 1/2 tbs onion powder
- 1/2 tbs creole seasoning, or seasoning salt
Instructions
- Remove outer layer of cabbage and discard.
- Cut cabbage in half and remove the core, then cut cabbage into wedges, about 1 inch in length.
- In a large skillet, add chopped bacon and cook until crispy.
- Remove bacon from the skillet and leave the oil.
- Cook sausage in remaining grease for 5-10 minutes or until crispy, then remove.
- Sauté onions and peppers, until soft. Add in cabbage and spices.
- Reduce heat and cover with the lid for about 10 minutes, stirring occasionally.
- Add sausage in and cover with lid for about another 10 minutes.
- Once cooked to desired tenderness, add in crispy bacon and serve while hot.
