Ingredients
- 2 lbs chicken thighs, cut into bite-sized pieces
- ½ tbsp onion powder
- ½ tbsp garlic powder
- ½ tbsp paprika
- ½ Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- 1 cup Olive Garden Zesty Italian Dressing (plus extra for basting)
- ¼ cup grated Parmesan cheese
Instructions
- Place the diced chicken thighs in a large bowl.
- Season with onion powder, garlic powder, paprika, salt, and black pepper. Toss until evenly coated.
- Pour the Olive Garden Zesty Italian Dressing over the chicken and mix well. Cover and marinate for at least 2 hours, or overnight for the best flavor.
- Assemble the skewers by threading the marinated chicken pieces onto skewers.
- Preheat the grill to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F.
- While the chicken cooks, combine a few tablespoons of the reserved Italian dressing with the grated Parmesan cheese.
- During the last few minutes of grilling, brush the Parmesan-dressing mixture over the skewers, turning and basting once or twice to build flavor.
- Remove from the grill and serve hot.
