One Pot Smoked Sausage and Rice

This sausage and rice dish is a quick one pot meal that is full of flavor. I like to use Kielbasa beef sausage, but any type of sausage will work. I also like to use Jasmine rice. I have not tried any other grain, but it should work the same as well.

QUICK ONE POT MEAL

The flavor in this meal is all packed in the sausage. Feel free to switch up the sausage and seasonings for an alternative dish.

Ingredients

  • 14 oz smoked sausage (sliced into 1-inch pieces)
  • 1 small green onion, diced
  • 1/2 yellow onion, diced
  • 2 cups Jasmine rice
  • 3 1/2 cups chicken broth or water
  • 1 10 oz can of Rotel (diced tomatoes and chilies)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon Cajun seasoning
  • 3 tbs olive oil
  • 3 tbs butter

Instructions

  1. In deep skillet, heat 2 tbs of olive oil and cook sausage over medium high heat. 
  2. Remove sausage from pot, then and add in 1 tbs of olive oil and diced vegetables, sauté until translucent. 
  3. Add rice into pot, butter, chicken broth, Rotel, and seasonings. Stir and bring to a boil.
  4. Cover with lid, reduce heat to a simmer, and cook for 15-20 minutes.
  5. Once rice is cooked, and in your cooked sausage, fluff rice, and serve.
