Cheesy Beef Stuffed Bell Peppers

Ingredients

  • 6 bell peppers
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 1 lb cooked white rice
  • 1 tsp minced garlic
  • 8 oz tomato sauce
  • 8 oz water
  • 2 cups mozzarella cheese, shredded
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste

Instructions

1. Preheat oven to 375°F. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish. 2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease. 2.  Stir in the diced onion and cook until soft (about 3–4 minutes). Add minced garlic and cook 30 seconds. 3. Add cooked rice, tomato sauce, water, onion powder, garlic powder, Italian seasoning, salt, and pepper. Stir well and let simmer for 5 minutes. Remove from heat and mix in 1 cup of mozzarella cheese. 3. Spoon the mixture evenly into each pepper. 4. Bake covered for 35–40 minutes, until peppers are tender. 5. Top with remaining mozzarella and bake uncovered for 10–15 minutes, until melted and bubbly.
